The Best Birthday Cake Blondies

Do you like birthday cake, but don't want to go through the trouble of making an actual cake? Well, then I have just the thing for you - birthday cake blondies! They have the ultimate birthday cake flavor thanks to a few special ingredients. You'll definitely want to make these all year round - whether or not there is a birthday to celebrate!

Ingredients
  

  • ¾ cup unsalted butter (melted)
  • cup light brown sugar (packed)
  • 2 large eggs (room temperature)
  • 1 large egg yolk (room temperature)
  • 1 tsp clear vanilla extract
  • 2 cups all-purpose flour
  • ½ tsp salt
  • ½ cup rainbow sprinkles
  • ½ cup white chocolate chunks
  • Crushed golden Oreos for topping

Instructions
 

  • Preheat oven to 350°F and line an 8x8 inch square baking pan with parchment paper so that the sides are hanging over the pan. Spray with baking spray (like Pam for Baking).
  • In a small saucepan, melt the butter over low heat. Set aside to cool slightly. In a large mixing bowl, combine the cooled butter, brown sugar, and vanilla. Add in the eggs and egg yolk and mix until combined.
  • Add in the flour and salt. Mix until just combined, but do not overmix (some streaks of flour are ok).
  • With a spatula, gently fold in the rainbow sprinkles and white chocolate chunks. Pour batter into prepared pan and bake for 30-35 minutes, or until the blondies are set.
  • While blondies are still warm, press in pieces of golden Oreos on the top. Cool in the pan on a wire rack. Slice into squares and enjoy!

Notes

  • Blondies can be stored in an airtight container for 3 days at room temperature
