Funfetti Blondies
These dense, buttery and adorable funfetti blondies are a one bowl recipe that you can whip up anytime you need something a little sweet! Loaded with colorful funfetti sprinkles for extra happiness.

For the Blondies
- 1/2 cup unsalted butter, melted (1 stick)
- 1 cup brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1 cup all-purpose flour
- 1/4 cup rainbow sprinkles (they won't dissolve as easily as small sprinkles!)
Frosting
- 1/8 cup unsalted butter, softened (1/4 stick)
- 1 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 2 tbsp milk
- 1-2 drops pink food coloring (optional, or use whatever color you like!)
- rainbow sprinkles for decoration (optional)
For the Blondies
Heat oven to 350°F and line an 8x8 pan with parchment paper. Spray with non-stick cooking spray and set aside.
In a large bowl, whisk the melted butter and brown sugar together until smooth. Add the eggs and stir until combined. Add the vanilla, salt and flour and stir until just combined. Stir in the sprinkles.
Spread the batter into the prepared baking pan and bake for 25-30 minutes, or until a toothpick comes out clean in the center.
Cool at room temperature on a wire rack in the pan.
For the Frosting
In the bowl of a stand mixer fitted with the paddle attachment, or in a medium bowl with a hand mixer, beat the butter on medium-high speed until smooth and fluffy, about 3 minutes. Add the sugar, vanilla and milk. Beat until smooth.
If desired, add more milk and sugar to reach desired consistency. Spread over cooled bars and top with sprinkles if desired. Slice and enjoy!
- This recipe can easily be made in a 9x13 inch pan. Simply double the recipe if you are baking for a crowd!
- You can change up the frosting color and sprinkles too based on the season!
